DISTILLERY BOTANICA

Erina, NSW

Master distiller Phillip Moore's brief was straightforward: a 12m x 12m functional space to house his copper still and accommodate events. The design response created a vaulted ceiling conceived as a chapel for the still—transforming equipment housing into a space of reverence and celebration.

The dramatic vertical volume accommodates the copper still's height while drawing winter sunlight deep into the interior for natural warmth. Floor-to-ceiling windows frame views over a reflection pond to the gin garden beyond, creating connection between production space and landscape. The pond serves as terminus for Moore's envisioned rill while establishing contemplative quality appropriate to craft spirit production.

The space functions for production tours, gin-making classes, and hospitality events—multiple revenue streams within a single cohesive environment. Media coverage in Country Life magazine followed, though the project's success is measured in how well it serves Moore's operation rather than publication.

Distillery and brewery design requires knowledge beyond standard commercial practice: dangerous goods classifications, specialized building code requirements, production workflow, and equipment integration. Technical compliance serves the architecture, not the reverse.
